Vegan for a week!! (Lunch & Dinner)

Lentil Soup


Ingredients:

  • 1/2 cup Red lentils

  • 1 cup arrabbiata sauce

  • 2 tbl spoon Non - dairy yogurt

  • 1 tbl spoon Pumpkin seeds

Instructions:

  • Add lentils, tomato sauce and 320 ml water, bring to boil and cook under cover for 15 minutes on medium flame

  • Mix everything till smooth. Season with Salt and pepper.

  • Top it off with pumpkin seeds, yogurt and fresh herbs!!

Sweet Potato Salad



Ingredients:

  • 1 large sweet potato

  • ½ tablespoon olive oil

  • 1 teaspoon salt

  • 250 g soybeans

  • 1 package of cooked green lentils

Dressing

  • 1 avocado

  • 1 tablespoon of dijon mustard

  • 3 tablespoons lemon juice

  • 1 tablespoon of olive oil

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  1. Heat the oven at 200 °C. Rinse, scale and cut the sweet potatoes into small pieces, place the sweet potatoes on a tray, add salt and oil. Roast it for about 20 minutes.

  2. Rinse the lentils and mix with sweet potatoes and soybeans.

  3. In a bowl, mix the avocado, dijon mustard, lemon juice, zest, olive oil, water, salt and pepper.

  4. Top the salad with dressing!!

Taco Salad


Ingredients:

  • ½  red pepper

  • ¼ red onions

  • ¼ cup kernel corn

  • 1/2 cup black beans, cooked

  • 100 g firm tofu

  • 1 tbsp olive oil

  • ½ tsp cumin

  • ½ tsp pepper powder

  • 1/2 cup shredded green kale

  • 1 medium tortilla bread

Instructions:

  1. Cut the red peppers and onion into smaller pieces.

  2. Cut the tofu into cubes, fry the tofu in oil in a frying pan, season with spices, salt and pepper.

  3. Place the tortilla bread in a bowl, add the fried tofu, vegetables and the kale.

  4. Serve with cilantro and a lime wedge.

Chickpea Stew


Ingredients:

  • 1/4 cup wheat berry

  • 1/4 yellow onion

  • ½ tbsp olive oil

  • 3/4 cup cooked chickpeas

  • 1/2 cup vegetable cream 14%

  • 1 tsp pepper powder

  • 1 tsp turmeric

  • 2 cups baby spinach

  1. Cook the wheat berry according to directions.

  2. Chop the onion, then fry the onion and chickpeas in oil in a smaller casserole for a few minutes on medium heat.

  3. Add cream, 1/2 cup water, pepper powder and turmeric.

  4. Simmer for a few minutes, add the spinach and stir around.

  5. Season with salt and pepper.

  6. Serve with the cooked wheat berry.

Vegan Burrito

Ingredients:

  • 100 g firm tofu

  • 1 small red pepper

  • 1 tbsp finely chopped red onions

  • 1/4 cup corn kernels

  • 1 jar cooked black beans á 13.4 oz / 380g

  • 1 tbsp olive oil

  • 1 tsp pepper powder

  • 1 tsp cumin

  • 1 tsp garlic powder

  • 1 tsp salt

  • 1/4 cup shredded green cabbage

  • 4 large whole grain tortilla






Instructions:

  1. Crumble the tofu with a fork, fry in oil in a pan on medium heat. Season with pepper, cumin, garlic powder, and salt.

  2. Cut the pepper into smaller cubes, drain the water and rinse the beans.

  3. Mix together all the veggies and distribute the mixture, green cabbage, and tofu on the tortilla bread.

  4. Fold and serve.
